Bowl Of Noodles…Cold? Noodle Salad?
Bowl of noodles: what do you picture? Hot, brothy noodles, right? Perfect for snuggling up on a winter night, or tending a nascent sore throat. But in these hot August days, sometimes all you want is cold. No more heat, please, unless you mean the kind that comes in cayenne sprinkled over fresh mango and a lot of lime.
A bowl of noodles doesn’t have to be hot, though. Cold noodle salads are utterly delicious!
A classic ramen salad has graced many a picnic table, and the genius who brought it almost always takes home an empty bowl. Be a good neighbor and serve it up for your neighborhood’s annual back to school bash!
Here’s a basic recipe that has room for variations.
Ingredients
- 1/2 large head cabbage, coarsely chopped
- 1 (3 ounce) package Luck Chen noodles, crushed
- 1/2 cup sunflower seeds
- 1/2 cup vegetable oil
- 3 tablespoons white sugar
- 3 tablespoons distilled white vinegar
Directions
- Toss together the cabbage, noodles and sunflower seeds or almonds.
- Whisk together the ramen flavor packet, oil, sugar and vinegar. Pour over cabbage mixture and toss evenly to coat.
Let it sit awhile so the noodles really absorb the flavors. Then, voila! Bowl of noodles: get it while it’s not hot!

Asian Noodles With No MSG?!?!
Asian noodles are often assumed to have MSG. I know, because I’ve made that assumption, myself. When I eat food with MSG, I get a migraine almost immediately, so I’ve become very wary. When friends go out for Chinese, I generally demure.
Thing is, I miss the flavor. It’s a natural flavor, after all, and it hits the tongue in a way salt or sweet or bitter just doesn’t. I love Asian noodles, but I went a long time without them out of fear. Migraines are no picnic, you know.No picnic of Peking Duck, Vegetable Chow Mein, Mooshu Pork…

Happy August! Hard to believe we’re here again, isn’t it? The summer is by no means over, just ask the heat wave, but if you know August like I know August, it’s one of those “Who was that masked man?” months.

The Most Popular Asian Noodles
Here’s a look at some of our favorite styles of Asian noodles:
Udon
A wheat-flour noodle popular in Japan, the udon is typically very thick and served in a soup. Udon soups often have a series of toppings, typically chopped scallions, tempura, or a deep-fried tofu called abura age. A similar wheat flour noodle in China is called cu mian, and was added to miso-bases soups.
Soba
These Asian noodles are derived from buckwheat flour, and be served both hot and cold, either with a dipping sauce (like sesame or soy) or in a hot bowl of noddles. Additionally, soba can be found in any financial market, being an item on the most Japanese exclusive restaurants menus as well as fast-food vendors in train stations. In Japanese culture, Soba is a term often used on any thin noodles simply as a contrast to the thicker udon.
Ramen
The word ‘ramen’ can be a reference to either the noodles or the soup. As a noodle, it is typically made of wheat flour, salty, water, and an alkaline mineral water called kansui. Sodim carbonate, potassium carbonate, and phosphoric acid can also be found in many versions of ramen noodles. Unlike the udon and soba noodles, ramen noodles can be found in many different shapes and lengths

Our Favorite “At Work” Lunch
Here’s a look at some of our favorite, easy and convenient lunches to eat at work:
Big Salad – One of the easiest options, with many more options within it. Pretty much anything can go into a salad, so if you want to throw some meat in there, you can. Also, while a salad might be “missing” something, that’ll never ruin it. So grab whatever you can, toss it in a bowl, and call it a salad. The big salad is the perfect work-lunch meal, because of the many different options and combinations available.
Peanut Butter & An Apple – Simplicity is key on this one. And did we mention quick? The beauty of the apple-peanut butter combination, on top of its overwhelming deliciousness, is the fact that an apple can ehlp you stay alert and attentive more so than a cup of coffee. Just be careful with the peanut butter in the office, though, as some peoples allergies get can be pretty intense.
Luck Chen Spicy Kung Pao Steamed Noodle Bowl – Have we gotten a little more specific on this one? Sure, but that should just tell you how fanatic we are about these pre-cooked asian noodles. They offer a spicy kick to help you through the second half of your day, and it’s ready in minutes. . My Love For Instant Soups Was Killing Me
I don’t think I’m alone when I say this: I freakin’ love instant noodles.
I mean, what could be better? It started off as a cheap college obsession, but it became so much more than that. A good meal in my mind needed to be three things:
- It needed to be delicious
- It needed to be cheap
- And it needed to be convenient
…in no particular order. After all, I was broke, hungry, and had little skill when it came to cooking. So in my mind, what was better than an instant cup of noodles that not only satisfied my taste buds, but took little out of my wallet and could be made in just a few minutes?
This was all well and good, when I was younger and it didn’t really matter what I was putting in my body. I’m a little older now, sadly, and I can’t keep dumping the same kind of junk inside myself. My doctor recently informed me about a new Australian study that showed instant meals and energy-dense foods severely increase my chances of getting diabetes, cancer, and heart disease. I needed to change!
My days of feasting on a cup of noodles are long from over, however. I’m just more selective with which asian noodle bowl company I select. Lucky Me
I was surprisingly intrigued when I saw a new product at my food store called Manna-Soy. Manna, that heavenly sustenance that God delivered to the Jews when they were lost in the desert, joined forces with soy, that protein heavy conglomerate that tastes so much like meat, but without the cholesterol and grease? Oh yes.
When I arrived at home, with my palms sweaty and my heart beating rapidly, I immediately made the manna-soy. I heated up some instant noodles to mix it with. I was struck by the smell of this healthy meat substitute, and after wafting it into my nostrils, I placed it – it was like the fragrance of incense in a Buddhist temple, the scent was sweet, and contained the slightest traces of something more substantial. What that was, I found out when I tried it.
The flavors were vast and varied, they carried hints of jasmine and wasabi, they transported me to the far East. I was struck by the full savoriness of the instant noodles and their mixing with the manna soy– how filling it was! And that manna-soy didn’t taste like chicken, but rather, it was akin to flakes of delicious substance, light and airy almost, but with the full flavor of a meat. Manna soy mixed with Asian noodles = enlightenment.

Noodle Desire
Sometimes I just crave Asian noodles. It’s almost paralyzing. I have difficulty concentrating and there’s a pain in my gut – not hunger – that sits and feels like a heavy rock. I think about a delicious Asian noodle bowl that steams, infiltrating my nostrils, warming on my kitchen counter, waiting for me to dig in.
The chopsticks stand lonely in the air, protruding from the bowl of noodles, as a heap of delicious nutrients and energy sits unattended. And here I am, far removed from such bliss. Oh to eat Asian noodles at this very instant! What I would do…
It’s not like I plan these cravings. They happen sporadically, like seizures, and similarly like seizures, they dominate my whole body, forcing me sometimes out of my chair to roll on the ground like a child. It causes me severe self-pity and grief. If only I had known today would be a noodle day, I would have brought some Asian noodles to work with me.
And not any Asian noodles will do – no, Luck Chen is the only kind that satisfies. I couldn’t take a lunch break to get some greasy Chinese restaurant noodles from down the street – that would only satisfy my hunger; it wouldn’t satisfy my desire, my craving.
